Strawberry Rhubarb Pie Recipe

It is that time of year for strawberries, blueberries, raspberries and all the other lovely berries that make they’re debut in the early summer. One of my favorite summer pie recipes is strawberry rhubarb. Growing up, my family always had fresh rhubarb and homegrown strawberries with more then enough to go around. This recipe was a staple in my mothers kitchen and was always gobbled up at family gatherings.


  • 1 unbaked pie crust
  • 3 cups of rhubarb, chopped into 1 inch pieces
  • 1 pint of strawberries, cut in half
  • 3/4 cup sugar
  • 2 tbsp flour
  • 1 egg
  • 1 tsp vanilla

Crumb topping

  • 1/2 cup oats
  • 1/2 brown sugar
  • 1/2 cup flour
  • 1/2 cup butter


Preheat oven to 400 degrees. Combine all ingredients in a bowl and pour into unbaked pie crust. Mix together oats, brown sugar, and flour. Cut in butter with a biscuit cutter or 2 knives. Crumbling topping over the strawberry rhubarb mixture. Bake for 10 minutes then lower the temperature to 350 degrees and bake for another 40 minutes or until crust is golden brown. Serve with whipped cream or a scoop of vanilla ice cream.
